  17. Get 1/2 tsp cumin seeds
  18. Take 2-3 dry red chilles
  19. Make ready Pinch asafoetida
  20. Make ready 1/2 tsp ginger paste
  21. Make ready 1 tsp Green chilli paste
  22. Take 1 tsp red chilli powder
  23. Prepare 1/2 tsp cumin powder
  24. Get 1/2 tsp coriander powder
  25. Prepare 1/2 tsp garam masala powder
  26. Take to taste Salt
  27. Take as needed Water
  28. Get 1 tbsp lime juice
  29. Take Handful coriander leaves
  30. Take 1/3 cup dry fruits (cashews and raisins)

Instructions to make Turiya Patra nu Shaak:
  1. Take a bowl & add gram flour into it.
  2. Add cummin powder, coriander powder, red chilli powder, garam masala powder, sugar and salt.
  3. Add tamarind pulp, lime juice and oil.
  4. Mix all ingredients well.
  5. Add baking soda and mix it.
  6. Add water if required.
  7. Make thik batter.
  8. Now take Patra leaves & cut the veins (nas) of it.
  9. Take one tbsp batter and spread on leaves.
  10. Put another Patra leave on it and again spread the mixture.
  11. After that roll it.
  12. By using same steps do it for remaining Patra leaves.
  13. Now cut it into Patra shape.
  14. Now take a pan and heat oil.
  15. Add cummin seeds and let it crackle.
  16. After that add asafoetida & dry red chilles.
  17. When chilli change the colour add chilli paste and ginger paste into it.
  18. Saute it.
  19. Now add dry fruits and let it cook for 1/2 minute.
  20. Add chopped ridge gaurd into it and mix it.
  21. Now add cummin powder, coriander powder, garam masala powder and salt.
  22. Mix it well.
  23. Add 1/2 cup water & bring it to a boil.
  24. After that add cut Patra.
  25. Gentaly mix it.
  26. Cover the pan and cook it for 15-20 minutes.
  27. Check in between and mix it.
  28. After that check using knife Patra is cooked or not.
  29. If not then cook it again for 5-10 minutes.
  30. Add water if require.
  31. Now add lime juice and mix it well.
  32. Add coriander leaves and mix it.
  33. Now turn off the flame
  34. Serve hot with poori, phulka rotli or bajra na rotla.
