You can find vegetable mixes or medleys at the grocery store or you can just pick and choose which frozen veggies you would like to add. I saw rice in the pantry, and also one of my favorite seasoning in the world - Better than Bouillon, Roasted Chicken Based. And we were out of veggies - except for a bag of frozen mixed veggies in the fridge. At that fateful moment, everything came together.

Steps to make Vegetable / Rice:
  1. Prep. Tofu for use: Slice and press for 45 minutes (to drain water out)
  2. Broccoli, Bok Choy and Napa Cabbage prep: Wash and cut leafy greens from stems. Use only broccoli florets.
  3. In pan combine Vegetable broth, rice, butter, tofu, and reallemon juice. Scramble tofu and mix well. Let cook until rice is tender.
  4. Mix in sugar snap peas, carrots, broccoli florets, cauliflower, and daiya cheese. Mix well. Let cook until cheese melts.
  5. Stir in Spinach, Bok Choy, and Napa Cabage leaves. Let sit on heat for a few minutes.

And we were out of veggies - except for a bag of frozen mixed veggies in the fridge. At that fateful moment, everything came together. I didn't really know what to call it, but Easy Mixed Vegetable Rice it is. I designed this recipe to work well in a regular skillet (preferably cast iron), since most of us don't have woks at home. The only tricky part, which really isn't so difficult, is to cook the eggs, vegetables and rice separately, and combine them all at the end.
