  4. finely chop parsley

  6. add onions,tomato,and half of the parsley
  7. let onions,tomato,parsley and garlic simmer and cook down
  8. add beef to tajine
  9. add 1/2 tbs. cumin,1 tbs. paprika,salt and pepper to beef
  10. let beef brown on all sides by turning in tajine
  11. if the juice is starting to dry up add 1/2 cup of water and place on the lid
  12. wash,peel, and slice potato into quarters
  13. wash jalepeno and use knife to poke several holes
  14. add jalepeno to tajine continuing to check liquid add water as neede to prevent burning
  15. add potatoes to the tajine placing over top of the beef
  16. add salt,pepper and remaining cilatro on top of potatoes
  17. also add remaing garlic,1tbs parika and 1/2 tbs cumin over potatoes
  18. again check sauce add water gradually and place lid back on the tajine
  19. allow to cook and simmer continually checking to ensure sauce has not dried up to prevent burning
  20. you will know its done when the potatoes are soft and the beef looks done to your taste
  21. when done serve out of tajine you cooked in with toasted bread
  22. this is a american/morccain dish so typically they would use bread and hands to eat directly out of the tajine
