  1. Peel and cut into roundels..
  2. Soak tamarind in water
  3. In a pan take 2tbsp oil and fry the ginger pieces till golden and crisp
  4. Crush them using a mixer grinder….
  5. Into the left over oil add fry chilli powder and coriander powder till you get a nice aroma
  6. Squeeze the tamarind and discard the pulp.Now pour tamarind juice and grated jaggery. let it come to a boil.
  7. At this stage add the crushed ginger and stir nicely till everything comes together and you get a thick mixture…
  8. In another pour 1tsp oil splutter mustard then add red chillies and curry leaves…
  9. Pour this onto inji puli and mix nicely
