He runs miles away when i cook brinjals. Kongunad Coimbatore style kathirikkai bhajji / brinjal chutney. Its a simple chutney that goes so well with dosa. We call this chutney as bajji and that might be due to the influence of the vast telugu speaking community of Coimbatore region.

Steps to make Thakali Kathirikai Bajji/Tomato Brinjal Gravy๐Ÿ…๐Ÿ†:
  1. In a kadai, add oil. Once oil gets heat, add mustard seeds, cumin seeds and coriander seeds. Fry it.
  2. Add onions, curry leaves and green chillies. Saute till onions becomes translucent.
  3. Add tomatoes, brinjal and garlic. Saute well.
  4. Add turmeric powder, chilli powder and salt. Saute for 2 mins.
  5. Add required water. Cover and cook for 15 to 20 mins in medium flame.
  6. Take out the kadai from the flame. Mash the gravy well when it's hot. If it cools down you cannot mash it properly.
  7. Garnish with coriander leaves. Transfer to a bowl.
  8. Now it's ready to serve. Serve with idli, dosa and paniyaram.

This is a very popular spicy and tangy kuzhambhu with lentils and other spices which popular in our households. Today I made it with brinjal/eggplant and black channa. It goes very well with rice and doesn't need any special side dish,papad is the best combo. This kuzhambu tastes even better the. Next add chopped tomatoes, turmeric powder, required salt and few tbsp water to the pan, stir the brinjals gently until a slight gravy is formed.
