  2. Take 1 + 30 grams Shirasu
  3. Take 1 Bonito flakes
  4. Get 1 Roasted sesame seeds
  5. Make ready 1 Nori (dried seaweed sheet)
  6. Prepare 1 to garnish Young green scallion (or mitsuba, shiso leaves)
  7. Make ready Dressing
  8. Take 50 ml Ponzu
  9. Prepare 1 or 2 teaspoons Sesame oil

Spice up your salad with this Japanese Korean fusion! Put diced carrots, celery, Clearspring organic dried daikon and small pieces of kimchi into the bowl of dressing. Serve mixed vegetables in the middle of the plate covered with spinach. This salad uses daikon radish, also known as mooli, for its lovely crisp texture which gives the dish added crunch.

Instructions to make Crispy Shirasu and Daikon Salad:
  1. Slice the daikon and soak in a bowl of water.
  2. Spread the shirasu on a tray evenly. Microwave the tray without covering with cling film. Shake the tray occasionally to mix the shirasu and repeat the process several times.
  3. It is done if the shirasu takes on a crispy colour like in the photo. I microwaved and watched over as it cooked.
  4. Make a dressing by mixing ponzu sauce and sesame oil. Oour the dressing just before eating.
  5. Drain water from the sliced daikon and serve them on a plate. Place the crispy shirasu, dried bonito flakes, sesame seeds, nori, and young green scallion cut into small pieces on top. Pour the dressing.

Peel and slice the daikon into thin strips. Soak in ice water for a while to make it crispy. Drain well and squeeze to get rid of any excess moisture.
