Instructions to make Saibhaji:
  1. Wash and soak the dal for an hour.
  2. Heat oil in a cooker with chopped onions.
  3. Cook till they become little brown add ginger garlic paste,cook till aroma smells off.
  4. Now add red chilli powder and turmeric powder,mix well and stir for a second.
  5. Add chopped tomatoes, mix well and stir for a minute.
  6. Now add all chopped green chillies & salt.Mix well and stir.
  7. Add all chopped vegetables and mix well.
  8. Now drain the water from the dal and add it.Mix again.
  9. Add all the chopped greens,mix well & stir for a minute.
  10. Now add 2 Cups water.
  11. Covet the cooker with lid and allow 3 whistles.
  12. Let it cool down and then open the cover.
  13. Now mash all with the masher.
  14. Heat 2 tbsp of pure ghee in a pan with cumin seeds.
  15. When they crackle up,add chopped garlic cloves.mix well & stir for a second.
  16. Now add hing & dry mango powder.mix well & switch off the flame.Pour this tempering over the cooked veggies.
  17. Cook on low flame for 5 minutes.Serve hot with jerra rice or chapati.
