  1. To make uttapam batter soak rice n udaddal for 5 to 6 hrs n then grind it. While grinding add soaked poha to it. Keep this batter for fermentation for 8 hrs or overnight. Pour one spoon of batter on pan and spread onion tomato on it. Roast it well from both the sides by leaving oil from sides to make it crispy
  2. Pour batter on pan and spread garlic, coriander and green chillies on it. Roast it well from both the sides.
  3. Pour batter on pan. Make flat tikki of potato sabzi and keep it on batter. Again pour some batter to cover the sabzi. Leave some oil to roast. Cover with lid. After one side is roasted, turn the uttapam and roast it from another side. While serving cut into 2 and serve
  4. Variety of uttapam is ready to serve
