  24. Prepare 2 tbsp Coriander Powder / Malli Podi

  26. Make ready 2 tsp Pepper Powder –
  27. Make ready 1 tsp Turmeric Powder / Manjal Podi –
  28. Take 2 tsp Cumin Powder / Jeera Podi
  29. Get 1 tblspn garm masala powder
  30. Take to taste Salt
  31. Make ready 1 cup Curd / Yogurt –
  32. Take as needed Water
  33. Take Coriander leaves as needed finely chopped
  34. Prepare Mint Leaves as needed finely chopped

  36. Prepare 1 tsp Fennel Seeds / Sombu / Saunf

Steps to make Biryani:
  1. Wash and soak basmati rice for 30 mins. Drain it and cook it as per this directions. Drain and set aside. - - Take saffron in a bowl, add little milk and let it sit till everything is done.
  2. Take all marinating ingredients in a bowl and mix well. Leave to marinate for 15 mins to 1 hour.
  3. Heat 2 tblspn oil in a pressure cooker. Add in beef and stir fry for 5 mins. Add in 1.5 cup of water and mix well. Pressure cook for 10 - whistle, simmer for 15 to 20 mins. Turn off the heat and let the steam go all by itself. Open the cooker and check for doneness.
  4. Now heat oil in a kadai. Add in whole spices and sizzle for a min.Add in onions, curryleaves and salt. Cook till onions get golden.Add in tomatoes and cook till it gets mushy.
  5. Add in all spice powder and mix well. Add in yogurt and give a good mix.Add in half of the mint and coriander leaves.Add in the cooked beef along with liquid and mix well. Cook till it gets thick.
  6. Now heat ghee in a pan, add in onions and fry till golden, add in cashews and kishmish and fry till golden. Set aside.
  7. Now lay the cooked basmati rice over the masala, top with mint and coriander leaves, fried onions, cashews and kishmish along with the ghee, saffron milk. Cover with a tight lid and put this over a tawa on low heat.
  8. Let this cook on dum for 15-20 min.Now biryani is ready.

Add the chicken and turn to coat. Biryani can be an elaborate, ambitious affair, packed with layer upon layer of spiced meat and vegetables all steaming together with ghee. This version is simplified, with just two layers. Their biryani is a spicy-hot pukka style, and features lamb, blanched tomatoes, potatoes, and prunes. Sindhi biryani is the biryani I grew up with.
