  1. In a bowl mix rava, curd, salt and baking soda mix it well cover it and let it rest for 1 hour. Add water and adjust to the pouring consistency. Rava should be fully soaked. Finely chop onion and Coriander leaves, grate the carrots.
  2. Heat a non stick greased tawa, add ladleful batter and spread evenly, sprinkle and make a gentle layer of onions carrots and coriander leaves. Cover and cook.
  3. Now flip the uttapam and cook again until light golden colour comes. Serve this hot and tasty uttapam with tomato and coconut chutney.

There is no raising agent in this like baking soda, so it is less fussy. Rava mixed with onion, tomato and yogurt to make this quick uttapam. Add red chilli powder, green chillies, cumin seeds, tomatoes, onions and coriander leaves and mix well. Yesterday I made onion rava oothapam and tomato chutney.
