  2. Get 3/4 cup curd
  3. Take 1/4 cup milk

  7. Get 1 teaspoon mustard seeds
  8. Prepare 1 tsp chana dal / bengal gram
  9. Make ready 1 tsp urad dal / black lentil

  13. Prepare 1/2 cup Pomegranate seeds
  14. Take as needed Grapes
  15. Get 5 to 6 Fried cashews
  16. Prepare 1/2 cup Grated carrots
  17. Make ready 1 Chopped cucumber
  18. Make ready 1" Fresh ginger

In the state of Tamil Nadu it is called thayir saadam, and in Telangana and Andhra Pradesh it is called perugannam/daddojanam. This yummy rice, seasoned with fresh ginger and garlic, curry leaves, and cinnamon, is an excellent way to use up leftover cooked white rice. It tastes awesome hot or cold, especially hot on cold winter nights. Best of all, it takes all of ten minutes to make.

Instructions to make Curd Rice:
  1. In a bowl, put cooked rice, curd, milk and salt and mix well. Put it in the refrigerator to cool.
  2. Heat oil in a pan and add mustard seeds. When they begin to splutter, add urad and chana dal and fry until golden.
  3. Add chopped green chilli, asafoetida and curry leaves. Remove from heat and put the tempering prepared to the curd and rice mixture.
  4. Mix well and serve cold.
  5. You may garnish it with pomegranate seeds, fried nuts, grapes.

Add salt and sugar and keep aside. Now heat oil in a pan. Add mustard seeds, cumin seeds and chana dal and wait till the dal turns light brown. Now add chilli, hing, cashews and curry leaves and allow these to sizzle. Curd rice is quintessential comfort food!
