Hello folks, I am back with another tantalizing Mangalorean dish - Kori Rotti - from one of Mangalore's sub cuisines - Bunt cuisine which is one of India's Well, as you know 'Kori Rotti' is a combo dish. - Heat an earthenware vessel with 1tbsp ghee and tip in cinnamon and cloves saute for few secs…then add onions and saute till brown and tip in tomatoes and cook till mushy…add in the marinated chicken and saute for a while.Then tip in the masala paste add a cup of water +salt and close with a lid and let cook for 5 mins.
- Then add the coconut milk and close the lid…cook till done. Lastly pour a tablespoon of ghee and switch off the flame. Keep it covered for sometime before serving for the flavors to enhance.
- Take the store-bought rotti (Mangalorean rice crepes) crush them a bit and pour the curry onto the crepes and let it soak a bit before YOu dig in.
