Suran, or Elephant yam, is the edible bulb or corm of a very unique looking single-stalked, flowering plant. Suran (pronounced sue-ran) is a large tuber also known as Elephant yam. Botanically, the plant is classified as Amorphophallus paeoniifolius and is unrelated to the common yam, which is. One of my favorite vegetables is Suran or Elephant foot yam.

Instructions to make Suran(yam) sayail sabzi:
  1. Firstly cut Suran in square pieces and put to boil in Cooker for one boil with little salt,then in same Cooker put 2 tspoon oil,fry Suran pieces forr few mins and keep aside
  2. Then in same Cooker put grated onions stir and fry till it becomes pinkish brown and then put ginger garlic paste green garlic leaves and green chillies and then put little red chilli powder and stir for a while and then put tomatoes cubes and stir for few minutes and then put fry Suran pieces and put all Masala (coriander powder haldi and salt)
  3. Now put water as per requirement and cover the cooker for 1/2 whistle and then put little garam masala and garnish with coriander leaves
  4. Serve hot with chapati ya roti yummy it taste

It is such a weird name for a very unique vegetable that is recommended in Ayurveda. I usually don't find fresh Yam in Sydney, but thankfully there is frozen Yam available in the Indian stores here.
