  1. In a large bowl sift besan. Add milk in it and mix well. Mix it well so we get a lumps free free flowing paste. Keep aside for 10 min.
  2. In a saucepan heat water. When water is rolling boil add sugar in it and stir it. When syrup looks little thick turn of the gas.
  3. Heat ghee in a kadhai.
  4. Mix besan batter once again. Adjust the consistency if needed. Take a ladle full of batter.
  5. Take jhara in one hand and ladle in another. Place jhara above the kadhai. Pour besan batter in jhara slowly, do not spread by spoon, let it fall on its own.
  6. Fry boondi until get golden colour.
  7. Now sugar syrup is cool enough. Add cardamom powder and rose essence in it. Mix well and cover it.
  8. Put fry boondi in sugar syrup and stir it. After 5 min strain boondi and put in a bowl. Repeat the same process for remaining.
  9. Delicious boondi is ready to serve.
