- Next add 250 grams of dark muscovado sugar.
- Add two heaped teaspoons of mixed spice, then stir all the ingredients together thoroughly.
- Meanwhile in a saucepan on a very, very low heat melt 6 oz butter, do not boil.
- Add melted butter to other ingredients.
- Stir thoroughly again.
- Grease a large roasting tin with the extra butter.
- Pour mixture into the tin and then place the tin into the coolest part of your oven, Gas mark 4, 350 degrees Fahrenheit or 177 degrees Celsius for 1.5 to 2 hours.
- When risen slightly and golden brown take out of the oven and sprinkle with castor sugar whilst still hot.
- When cooled, cut into 16 squares. Lovely served warm or cold, stores well in an airtight container.
