  1. Prepare 1 cup whole wheat flour
  2. Prepare 5 tbsp ghee
  3. Prepare 3/4 cup Grated jaggery
  4. Take 1/4 tsp cardamon powder
  5. Get 1 tbsp edible gaund (gum) Stir fried in hot ghee
  6. Make ready 1 tbsp chopped almonds
  7. Make ready 1 tbsp chopped pistachios

  1. Melt ghee in a non stick pan.
  2. Add whole wheat flour and saute for 15 minutes in a slow flame till it turns golden brown in colour stirring continously.
  3. Remove from flame.
  4. Add jaggery and cardamon powder and mix well.
  5. Add stir fried edible gum and mix well.
  6. Stir well till the jaggery melts and the mixture is mixed well.
  7. Add chopped almonds and chopped pistachios.
  8. Pour the mixture in a greased thali and spread it with the Base of a small bowl.
  9. Cut into square pieces while still warm.
  10. Garnish with chopped Almonds and pistachios.
  11. Store in an air tight container.
  12. Enjoy

Our familial roots are in Nadiad but with passage of time. The color of papdi depends on the color of jaggery. Mine came out light yellow in color.
