It is a special meat and rice biryani dish originating from the Sindh province of Pakistan. Sindhi Biryani is a North Indian recipe made using mutton, basmati rice, yoghurt, onions, green chillies, potatoes and tomatoes.
Steps to make Sindhi biryani:
- Wash and soak rice for 30 minutes than boil with salt, cumin seeds, cloves, cinnamon and black pepper.
- Drain the water when rice boil upto 80 percent. Keep a side
- Wash and peel potatoes and cut into large cubes. Keep side, (if u want soak in water with orange food colour)
- Take a mixer and add red chillies, green cardamom, black cardamom, cloves, black pepper, cinammon, maiz, nutmag, cumin seeds, shah zeera, bay leaves and grind well to prepare biryani masala
- In a large bowl add chicken, yogurt, ginger garlic paste, biryani masala, fresh coriander, mint, lemon juice, chopped tomatoes, salt, dried plums and marinate for 2 hrs
- Now take a vessel and heat oil and fry onions till golden brown and take out in a plate to use in layers.
- Now in the same oil add marinated chicken and cook till chicken become soft than Add potatoes into chicken mixture till done as well. Close the flame when oil seperated from masala.
- Take an other big vessel and add half of the rice than layer chicken masala, sprinkle fried onions on top than again cover with 2nd layer of rice. Add some zafrani food colour on top of rice. Cover the lid tightly and cook for 15_20 minutes on simmer.
- After that open the lid mix the rice and dish out for serving. Serve with raita and salad
