Patrode or Alu Vadi is a vegetarian dish in Malvani/Maharashtrian cuisine. It is made from colocasia leaves (taro, kesuve or arbi) stuffed with rice flour and flavourings such as spices, tamarind, and jaggery (raw sugar). In Konkan part, patrode is a made as a steamed dumpling wrapped in a leaf. Patrode or aloo vadi is a dish made with rice batter mixed with spices and steam cooked along with colocasia leaves.

Steps to make Patrode:
  1. Clean the colocasia leaves and trim the stem.
  2. Soak the raw rice for 1-2 hours.
  3. In a pan add oil and fry coriander seeds, methi seeds, jeera, red chilies, curry leaves.
  4. Grind the soaked rice, grated coconut, fried seeds, jaggery, and tamarind to a coarse paste.
  5. Transfer it to a bowl and the consistency should be like dosa batter.
  6. Now place a big leaf on a flat surface upside down. Spread thin layer ground masala on the leaf.
  7. Now keep the second leaf on top of the first one, repeat the same procedure. You can layer 4 to 5 leaves.
  8. Fold the leaves and roll it.
  9. Once we are done with all leaves, keep the leaves on a steamer.
  10. Cook it for 30 mins.
  11. Serve the patrode with pulisery!!!!!
