The ingredients needed to make Alu wadi(Patra):
  1. Take 1 bunch Alu (Arbi) leaves colocasia leaves
  2. Prepare 1 cup besan
  3. Get to taste salt
  4. Prepare 1/2 lemon juice
  5. Take 2 teaspoon red chilli powder
  6. Get 2 teaspoon cumin powder
  7. Get 2 teaspoon sesame seeds
  8. Take water as required
  9. Get as needed oil for frying

Since Arum leaves are not available here, I had experimented making rolls with mustard leaves. Can't find Taro Leaves aka colocasia leaves? Try with Kale, Mustard, spinach(not the baby spinach) or other greens that don't get wilted easily upon cooking. Punjabi Aloo Wadiyan (sometimes called Amritsari Alu Wadi) is a dish I loved because it included potatoes and fried Amritsari Wadiyan in a spicy gravy.

Instructions to make Alu wadi(Patra):
  1. Wash leaves thoroughly, remove stem, keep aside
  2. In a bowl, take besan, add red chilli powder, cumin powder, salt, sesame seeds, salt to taste, lemon juice, water and mix, consistency of batter should be like pakora batter.
  3. Take a steamer and grease the plate and keep aside
  4. Take one leaf, and spread batter, take another leaf, and place it on first leaf, upside down now again spread batter, repeat this leaf batter layer for 5 leaves, every time keep leaves alternatively.
  5. Now take tip of first leaf and neatly fold the leaves, taking care that batter doesn't come out, roll in nicely and keep it on steamer plate.
  6. Repeat for rest of leaves,(In a bunch thier are 8 to 10 leaves), keep another roll also on steamer plate.
  7. Cove and steam for 10 to 15 minutes, check with knife, it should come clean.
  8. Once done, remove and allow it to cool down completely.
  9. Once cool take a knife and cut small rolls, don't cut it too thin.
  10. Heat oil for deep frying, once hot, fry all the rolls till golden brown and crispy.
  11. Alternatively, you can shallow fry them also, flipping till both the sides are crisp.
  12. Your Alu wadi or Patra are ready to serve… Enjoy..
