  3. Get 1 Onion (Finely Chopped)
  4. Take 1 Tomato (Finely Chopped)
  5. Get 2 Green Chillies (Finely Chopped)
  6. Take 1/4 tsp Turmeric Powder
  7. Prepare 1 tsp Chaat Masala
  8. Get 2 tbsp Coriander Leaves (Finely Chopped)
  9. Take Salt (To taste)
  10. Get Aloo Tikki Patties
  11. Take Green Chutney
  12. Prepare Chilli Garlic Chutney

Ragda Patties, one of the most famous street foods of Mumbai, is a satiating snack that is loved by people of all ages. Ragda Patties (pronounced as Pattice) are flavorful potato patties smothered with a zesty sauce made with vatana or dried white peas. It is then garnished with sweet and spicy chutneys, sev. Potato patties are topped with dried green peas gravy, two chutneys (green coriander chutney and tamarind date chutney), onions and sev.

Steps to make Ragda Patties:
  1. Wash and soak the dried white vatana in water for 6 to 8 hours or overnight. Drain it and add it to a pressure cooker. Add water, salt and turmeric powder and pressure cook it for 1 whistle and simmer for 10 minutes. Keep the ragda aside.
  2. Soak green moong in water for 5 to 6 hours. Drain the water. Keep it tied up in a clean muslin cloth till you see the sprouts coming out. Add water, turmeric powder and salt and steam it. Keep aside.
  3. Potato Patties: To the boiled & mashed potatoes, add 2 green chillies, 2 tbsp coriander leaves, 1 tsp chilli flakes, 2 tbsp cornflour, pinch of turmeric powder, 1 tsp cumin powder, few drops of lemon juice and salt. Make heart shaped patties & shallow fry on both sides till crisp and golden brown.
  4. Green Chutney: In a blender, blend together, 1 cup Coriander Leaves, 1/2 cup Mint Leaves, 2 to 3 Green Chillies, 2 tbsp Curd, 1 tbsp Lemon Juice, 2 Sambar onions, 2 cloves Garlic, 1 tsp Cumin Powder and Salt.
  5. Red Chilli Chutney: Heat 2 tsp Oil. Add 10 to 12 dry red chillies and fry for a minute on low flame. Remove the chillies. To the same oil, add 1 cup sambar onions and fry till golden. Add pinch of asafoetida, 2 clove garlic and salt. Stir and switch off the flame. In a blender, put in the fried ingredients, tamarind paste and blend to a smooth paste.
  6. Assembling Ragda Pattice: Take a shallow plate. Place 4 heart shaped potato patties at the base. On top of the patties, add the ragda. (I added ragda at the base of the plate, over it sprouted moong and then placed the patties). Add some sprouted moong over the ragda. Now drizzle the green chutney and red chilli chutney. Then add onions, green chillies, tomatoes, chaat masala and coriander leaves. Serve hot.
