  18. Prepare 1 tbsp corn flour
  19. Get 2 tbsp bread crumbs (for binding)

  21. Take 2 tbsp cooking oil for shallow fry

Ragda Patties, one of the most famous street foods of Mumbai, is a satiating snack that is loved by people of all ages. Ragda Patties (pronounced as Pattice) are flavorful potato patties smothered with a zesty sauce made with vatana or dried white peas. It is then garnished with sweet and spicy chutneys, sev. Potato patties are topped with dried green peas gravy, two chutneys (green coriander chutney and tamarind date chutney), onions and sev.

Instructions to make Ragda Patties:
  1. Wash and Soak peas overnight. Pressure cook in pressure cooker till 5 whistles. Let it cool. Let the pressure releases automatically.
  2. Wash and Chop onion, tomato, potato, green chilli and green coriander leaves.
  3. Boil tamarind in little water. Sieve the pulp.
  4. Mix all the chopped vegetables in boiled peas. Add salt, red chilli powder, chaat masala and garam masala. Mix well.
  5. For making patties: Mash boiled potatoes and add corn flour, bread crumbs and salt. Mix well and make a dough.
  6. Take a small portion of dough and make a ball and flatten it on your palm and give the shape of tikki. Likewise, make all the tikkis.
  7. Heat a non-stick griddle and put one tablespoon oil and fry tikki one by one till golden brown from both sides.
  8. Take a serving bowl and put cooked dry peas. Place a potato pattie over it. Add some more peas mixture. Squeeze half lemon. Add a tb spoon of green chutney and serve it garnished with onion and green chilli.
