Instructions to make Panjeri:
  1. Begin your steps by roasting nuts.
  2. Take 2-3 tbsp khalis ghee in a pan and fry phool makhanay light brown on medium flame. Be careful not to burn them.
  3. Remove from ghee and keep aside.
  4. Now add goondh in same ghee and slowly cook it.
  5. This process needs patience and goondh slowly puff up in the ghee.
  6. When the cracking stops it means it is done.
  7. Remove from the ghee and let it cool then grind coarsely.
  8. Roast all the nuts on low flame for a minute.
  9. Roast char maghaaz and keep aside.
  10. Add sooji and stir continuously till it's colour changes.
  11. Mix all nuts, char maghaz, goondh and elaichi powder.
  12. Mix sooji in nuts mixture.
  13. Add gurr or sugar. Mix well
  14. Add coconut and mix well and adjust sweetness according to tour taste.
  15. When completely cooled stored in airtight glass jars.
  16. Best for 4 months.
