  1. Heat 2 tbsp oil in a kadai. Add cumin seeds and let them splutter. Add asafoetida, ginger garlic paste, green chilli paste. Saute for 30 seconds. Add boiled and mashed potatoes and peas. Add oil 1/4 tsp turmeric powder, 1/2 tsp red chilli powder, 1/4 tsp garam masala, salt to taste, 1/4 tsp dry mango powder, coriander leaves. Mix well. Cook for 1-2 minutes. Switch off the flame. Adjust the quantity of masalas as per your taste.
  2. Once the potato mixture cools down divide the mixture into equal portions and shape them into small sized balls.
  3. Mix the chickpea flour, rice flour, turmeric powder, salt and chilli powder. Add water little by little and mix well until you make batter like dosa.
  4. In a kadai heat oil for deep frying the vadas. Check the temperature of the oil by adding little drop of batter. If it comes upwards immediately without changing it's colour. It's right time to add the vadas.
  5. Coat each ball with the batter and drop into the hot oil. When they turn golden brown drain them onto some paper towels. Keep aside.
  6. For the pav i have used white bread slices. Flatten out the bread slightly using a rolling pin. If you want you can trim the edges.
  7. Preheat the oven at 175° C. Grease a muffin pan and set the rolled out bread slices in it. Bake it for 7-8 minutes or untill it's toasted slightly.
  8. Take the pav add some green chutney, tamarind chutney in it. Place vada on it. Add more green chutney, sprinkle chat masala and red chilli powder on it.
