Steps to make Healthy Sooji pav / Bread / Toast:
  1. Grind one cup sooji in grinder. Transfer ground sooji in bowl. Mix 1/2 cup water. Cover and keep aside for 1 hour.
  2. After 1 hr uncover it and give a good stir.
  3. Mix 1tsp salt, 1tsp powder sugar, 1tsp instant active dry yeast, 1tsp milk powder in 1/4 cup water.
  4. Mix wet ingredients, 1/2 tsp cardamom powder in soaked sooji. Make a sticky dough.
  5. Grease the sheet or platform with oil and transfer the dough. Knead the dough for 5 minutes. Cover and keep aside for 40-60 minutes.
  6. Uncover the dough, transfer the dough on sheet and knead the dough for a minute.
  7. Divide the dough in two equal portions. Prepare balls for pav with one portion. For other portion take a ball and flatten it and roll in a log shape. Punch the both side ends.
  8. Now cover all and keep aside for 20 minutes for second proofing. After 20 minutes logs and pav are doubled in size. Milk/butter wash them gently.
  9. Bake in preheated oven for 20 minutes on 200 degree.
  10. Bread loaf and pav is ready now. Take out from oven. Grease with oil or butter and allow to cool completely for 2 hrs.
  11. Soft and spongy bread loaf and pav are ready. Cut the bread with thick slices. you can serve it with bhaji, Misal, Tea or coffee.
  12. For toast bake the bread slices in 200 degree in preheated oven for 15-20 minutes. Flip the bread slices of oven plate and bake for another 10-15 minutes on 200 degree.
  13. Homemade sooji rusks and pav are ready. Allow to cool and enjoy with meal.
