The ingredients needed to make Adadiya:
  1. Make ready 2 1/2 cups Adadia flour coarse
  2. Make ready 1 1/2 cups ghee
  3. Prepare 1 cup chopped almonds and pistachios
  4. Prepare 1/2 cup edible gum powder
  5. Prepare 2 cup powdered sugar
  6. Prepare 1 tablespoon adadiya masala

Steps to make Adadiya:
  1. Add the remaining ghee into a wide bottom pan and let it heat on a medium flame.Add in the adadiya flour and roast while stirring continuously.
  2. Once the mixture is golden and the aroma is strong the flour is cooked. Add in the adadiya masala and mix well. Turn off the gas and add the edible gum or fried gum and nuts. Mix well. Let it cool for 5 minutes before adding sugar.
  3. Let it cool completely as you want be able to mould them by hand properly. If using the mould do it after its cooled.
  4. If you do not have coarse flour or powdered edible gum use the steps below before making adadiya - Dhrabo - In a bowl add flour,milk and 2 tablespoon ghee. Rub it in the flour and set aside for 1/2 an hour. - Blitz the adadiya flour in a food processor. It should resemble bread crumbs. You can also sieve the flour through a large hole sieve
  5. If you have do not have fine powdered edible gum. - In a pan heat about 1/2 a cup of ghee and fry the edible gum. Fry small quantity at a time as it will pop. Once fried let it cool before mashing with a masher. Leave aside.
