Dahi vada is also known as "dahi vade" (दही वडे) in Marathi, dahi vada (दही वड़ा) in Hindi, "dahi bhalla" in Punjabi. Thayir Vadai / Dahi Vada or Curd Medhu vadai is a great and tasty traditional recipe of India. It is prepared on all special occasions and festivals. The word "medhu" means soft and the softness of the vada depends on how you prepare the batter.

Steps to make Curd Vada /Dahi Vada:
  1. Soak black gram for three hours, grinde to paste with green chillis, salt, pepper, curry leavrs, cumin seeds by adding minimum water. Transe to bowl and add coconut pieces, asafetida and mix well.
  2. Heat the oil in a kadai.Take batter in spoon leave it in hot oil and deep fry on both sides on sim untill they become crisp.
  3. Beat the curd with the help of beater and make tadaka by heating oil in pan and season with cumin, musterd, curry leaves, gramdhal and give tadaka to curd. Now masala curd is ready.
  4. Put vadas in serving bowl and pour curd on them. Now Curd vada / Dahi vada is ready.

Dahi Vada recipe is my fav…. Ever since I tasted the chat style dahi vada at Nilgiris I wanted to recreate it at home. I love anything curd based and when it comes to chaats, I cannot resist myself.
