  1. Dry roast the moong dal in a pan until light golden in colour, then soak it for 30 minutes.
  2. After 30 minutes wash the dal properly, drain excess water. Keep aside.
  3. Now wash the rice thoroughly, drain excess water and keep aside.
  4. Mix washed rice, dal, turmeric powder, cumin powder, green chillies, salt, ghee and ginger paste together. Keep aside.
  5. Heat oil in a large heavy bottom kadai.
  6. Add bay leaves, cardamoms, cinnamon, cloves and cumin seeds. Wait for few seconds.
  7. Now add cashew nuts and raisins, fry till brown.
  8. Next add rice-dal mixture and cook it for about 6-7 minutes on medium flame.
  9. Add hot water and let it boil.
  10. As the water boil reduce heat, cover the kadai and cook for 12-15 minutes or till all water is absorbed.
  11. Stir in between if necessary.
  12. Now uncover the kadai and add sugar and garam masala powder. Mix well and cook uncovered, for another 1-2 minutes on low flame.
  13. After 1-2 minutes turn off the flame and cover the kadai. Wait for 10 minutes.
  14. After 10 minutes uncover the kadai and serve bhuni khichuri hot.
