Steps to make Soft Chapati:
  1. In a large bowl, mix flour, powdered milk, sugar and salt.
  2. Make a well and pour ghee or cooking oil and water bit by bit as you knead. Knead for atleast 5 mins or until your dough comes together. - Continue kneading on your work surface for another 10 mins. You should knead your thoroughly to get soft chapatis.
  3. Your dough should finally be firm but soft and not sticky. Cover with a damp kitchen towel or cling film and let it rest for 1 hour.
  4. After 1 hour, divide the dough into 8-10 equal parts making ball shapes. Arrange them on a flat surface dusted with flour. Cover with a damp tablecloth to avoid drying.
  5. On your work surface, roll out the balls in a circular shape with a rolling pin one at a time. Brush with oil and sprinkle dry flour.
  6. Roll it inwards to form a rope-like a shape, then create a coil-like shape and press the ball down with your palm to make it flat.
  7. Repeat this process to the rest of the remaining balls of dough. Cover the dough and let it rest for 10-15 minutes.
  8. Roll the balls out again forming a circle.
  9. Preheat a non-stick pan or a heavy bottom skillet on medium heat. Place the chapati on the pan and leave it to cook. - - Brush the surface of the chapati with a very thin layer of oil. Once you begin to see bubbles rise on top of the chapati, flip it over to the other side and brush it also with a thin layer of oil.
  10. Continue to flip over about one or two more times until you achieve your desired brownness. - - Store in a casserole immediately. If you are planning on having them later, wrap them in a few tissues or aluminum foil.
