  1. Prepare 1 cup cooked rice
  2. Prepare 3 tbsp oil
  3. Take 15 garlic clove chopped
  4. Get 1 inch ginger grated
  5. Prepare 2 dry red chilli whole
  6. Prepare 1 big size onion chopped
  7. Get 1/2 cup beans
  8. Make ready 1/2 cup carrot

  16. Make ready 4 tbsp oil
  17. Prepare 2 garlic head
  18. Prepare 1/2 ginger
  19. Prepare 2 tsp vinegar
  20. Prepare 1 tsp soy sauce
  21. Prepare To taste salt
  22. Take 1 tbsp sugar
  23. Take 1/4 cup tomato ketchup
  24. Prepare 1/2 tsp pepper powder

It is very easy to make. Basically schezwan pepper is used to make this rice spicy. But it is not available easily. Schezwan style fried rice, an Indo-Chinese version with the ingredients availabe in our pantry.

Instructions to make Schezwan fried rice:
  1. Rinse the rice well. Add 2 cups of water and little oil to the rice. Cook the rice 90%. And allow to cool.
  2. To prepare schezwan sauce - first soak the dry red chilli in water for 4-5 hours. Or if you want it make it faster soak for half an hour and then blanch dry red chilli till it becomes soft. Allow to cool and dry it to a fine paste. Heat oil in a pan, add chopped garlic saute till it Becomes golden brown. Add ginger, red chilli paste made. Cook till oil separates. Add vinegar, soy sauce, sugar, tomato ketchup, pepper. And very little water. Cook till the color changes. Schezwan sauce is ready.
  3. Chop all vegetables. You can blanch them first and then cook. Another option is you can directly saute on the oil. But takes little extra time.
  4. Heat oil in a pan. Add chopped garlic and saute for few seconds. Till nice aroma comes and turn little golden brown. And add little grated ginger. Now increase the flame to high, add all vegetables. After sometime add little vinegar, pepper and salt.
  5. Keep on stirring the vegetables, till the oil separates. Now add the schezwan sauce. Mix well.Add the rice and keep on stirring. Stir gently as you don't want the rice grain to break.
  6. Mix and stir fry for 2-3 minutes. Check the taste. Add schezwan sauce, pepper, and salt if required. Serve hot. Schezwan fried rice is ready to serve.
