Instructions to make Shepherds Pie with Garlic Mash:
  1. You will need 2 good sized pans and a good sized ovenproof baking dish for this recipe.
  2. Put potatoes in a pan and add half the salt, add enough boiling water to cover them, put a lid on the pan and leave to simmer.
  3. Heat oil in a large pan over a medium heat.
  4. Add the chopped onion and cook until soft.
  5. Add the minced beef or lamb and cook for about 5 mins stirring often to brown the mince.
  6. When brown add the carrotts and cook for about 5 mins. Keep pan covered and stir occasionally.
  7. Add stock to meat mix. Cook for a couple of minutes.
  8. Whilst the potatoes and meat cook you can prepare the garlic. What you you need to do is combine the garlic and salt to make a paste. You could use a garlic press, a knife or a pestle and mortar. Just make sure you smash the two together, it really brings out the flavour.
  9. By now your potatoes should be ready for mashing. Check by sticking the point of a knife into a couple of them. If it goes in easily they are ready.
  10. Drain potatoes and return to the pan. Add garlic paste, butter, milk and mash.
  11. Add the minced meat mix to the baking dish and evenly cover the base.
  12. Add the garlic potatoes to form an even layer on top of the mince. I do this by putting equal tablespoons over the top and then spreading them around to form an even layer.
  13. Sprinkle the grated cheese on top and cook in a preheated oven at 180°C for about 35 mins or until crust has browned.
  14. Serve with salad and a nice red wine. Enjoy.
