  15. Make ready 4-5 Red chilli
  16. Prepare 4-5 Curry leaves
  17. Take 2 pinch Asafoetida
  18. Get 1 tbsp Grated coconut
  19. Get For seasoning
  20. Get 1 tsp Coconut oil
  21. Make ready 1 tsp Mustard seeds
  22. Prepare 1/2 tsp Urad dal
  23. Prepare 1 Red chilli
  24. Prepare 4-5 Curry leaves

Sambar is a traditional South Indian stew that goes well with idli, dosa, steamed rice or can be served as a soup. Any South Indian meal, be it breakfast, lunch or dinner, would be considered incomplete without Sambhar or one of its variants. Sambar, a hot and spicy lentil soup with mixed vegetables, is a must have accompaniment for popular South Indian breakfast and lunch recipes like Idli, Dosa, Medu Vada, Steamed Rice etc. A few years back Sambar used to be defined as South Indian delicacy, confined only to the Southern states of India.

Instructions to make Sambar:
  1. Cook the toor dal in a pressure cooker, mash it and keep aside.
  2. Heat 1 tsp of coconut oil in a pan and saute all the dry ingredients(for masala) except grated coconut until light brown/ nice aroma comes.
  3. Grind it to a fine paste using grated coconut.
  4. In heavy bottom vessel, add the vegetables, cooked dal, green chilli, curry leaves, salt, turmeric powder and masala paste.
  5. Cover and cook it until the vegetables get half cooked.
  6. Add tamarind extract, jaggery, and hing.
  7. Cook it for another 5 to 8 mins. Switch off the flame.
  8. In another pan heat oil and add all the seasoning ingredients. Let it simmer till they begin to crackle.
  9. Then mix these seasoning ingredients and some coriander leaves in the sambar and serve hot with rice.

I have used homemade sambar powder to make sambar recipe. But store-bought powder will work Wash and chop all the veggies you want to add to the sambar. I have used carrots, baingan (small.
