The ingredients needed to make Sambar:
  1. Make ready 200 gm Toor Dal
  2. Take 50 gm Chana Dal
  3. Prepare 250 gm Chopped veggies
  4. Take 1/2 tsp Turmeric powder

  6. Prepare 2 tsp Tamarind paste
  7. Take 4 tsp Sambar powder
  8. Prepare 2 Green chilli

Sambar is a traditional South Indian stew that goes well with idli, dosa, steamed rice or can be served as a soup. Any South Indian meal, be it breakfast, lunch or dinner, would be considered incomplete without Sambhar or one of its variants. Sambar, a hot and spicy lentil soup with mixed vegetables, is a must have accompaniment for popular South Indian breakfast and lunch recipes like Idli, Dosa, Medu Vada, Steamed Rice etc. A few years back Sambar used to be defined as South Indian delicacy, confined only to the Southern states of India.

Steps to make Sambar:
  1. Pressure-cook the dal in 500 ml of water with salt and turmeric powder for three whistles. Open the lid and add 250 g of chopped vegetables like brinjal, ladies finger, radish, drumstick, pumpkin etc. Cover and cook till the vegetables are soft and tender. Add 2 tsp sambar powder. Add onion(sliced), green chilli (slit), tamarind paste and cook for a while. Keep it aside.
  2. Heat 2-3 tsp oil in a deep pan. Temper 1/2 tsp panch phutan, 2 dry chillis, 5-7 garlic cloves (crushed), a pinch of hing and 10-12 curry leaves.
  3. Add boiled dal and vegetables. Add the remaining sambar powder and cover the pan. Reduce the heat and turn off the flame after 2 minutes.
  4. Serve hot with steamed rice.

I have used homemade sambar powder to make sambar recipe. But store-bought powder will work Wash and chop all the veggies you want to add to the sambar. I have used carrots, baingan (small.
