The ingredients needed to make Sambar:
  1. Get 1/4 cup Pigeon Pea
  2. Make ready 1 Cup Mix Vegetables (carrot, drumstick,onion,tomato,brinjal etc)
  3. Prepare 1/4 tsp turmeric powder
  4. Make ready 1/2 cup Tamarind extract
  5. Get 2 tbsp Sambhar Powder
  6. Get to taste Salt
  7. Prepare 1 tbsp Oil
  8. Make ready 1 tsp Mustard seeds
  9. Get 1 pinch Asafoetida
  10. Get 1 tsp curry leaves
  11. Take 1 tsp Coriander leaves

Sambar is a traditional South Indian stew that goes well with idli, dosa, steamed rice or can be served as a soup. Any South Indian meal, be it breakfast, lunch or dinner, would be considered incomplete without Sambhar or one of its variants. Sambar, a hot and spicy lentil soup with mixed vegetables, is a must have accompaniment for popular South Indian breakfast and lunch recipes like Idli, Dosa, Medu Vada, Steamed Rice etc. A few years back Sambar used to be defined as South Indian delicacy, confined only to the Southern states of India.

Instructions to make Sambar:
  1. Wash and pressure cook the pigeon pea for 3-4 minutes. Wash and cut the Vegetables as your preference and it to the cooked dal with salt and turmeric. Add 1/4 cup of water and cook again for one whistle. Release the pressure immediately so that the veggies do not get mushy.
  2. Add the tamarind extract and let it boil. In a small bowl add the sambar powder and little water and mix well. Pour this to the dal and veggie mix and allow to boil for 5 minutes. Add curry leaves and coriander leaves. Switch off the flame. Check the seasonings and adjust the taste.
  3. Heat a small pan with oil and spluter mustard, dry red chillies, asafoetida and curry leaves. Pour this to the Sambar and serve hot with Idli, Dosa or Rice😋
