The ingredients needed to make Mint - Corn Pulao:
  1. Take 1 cup basmati rice, washed and soaked for 15 mins

Roast and grind the masala powder ingredients. Grind mint and green chilli into a coarse paste. Mint and corn pulao is basically a rice recipe flavored with mint leaves and corn. This recipe of corn pulao is slightly different than the pulao recipes I have posted.

Instructions to make Mint - Corn Pulao:
  1. In a blender, add mint leaves, coriander leaves, ginger, garlic, green chilies, coconut and grind to smooth paste by adding little water.
  2. In a deep pan,heat oil + ghee and add cinnamon, bay leaves, cardamoms, cloves, cumin seeds and saute a minute till they become aromat.
  3. Then add sliced onions. Saute till the onions become golden and transparent.Add the blended mint masala paste, garam masala and saute the masala paste for a minute or two.
  4. Add the frozen corn and saute for a minute. Then add the lemon juice,salt and water, bring to boil.Finally check for seasoning and add rice,mix gently.
  5. Cook on medium flame till the water is absorbed to 80%. Then reduce to low flame and cook for 3 mins by covering it with lid.
  6. Turn off the flame and let it sit for 3 more mins and open the lid and gently fluff the rice.
  7. Serve pulao hot with plain curd or with raita.
