Steps to make Radish-carrot pickle:
  1. Wash and dry radish, carrot, green chillies and ginger
  2. Peel the radish, carrot and ginger, cut them lengthwise or as you desire. Ginger should be cut in thin julienne preferably.
  3. Split green chilli in two lengthwise.
  4. Keep all four ingredients to dry completely. There should be no moisture left.
  5. In a bowl mix carrot, radish, green chillies, ginger with all the ingredients, add the oil at the end. Mix it very well. Put it in a clean and dry glass jar.
  6. Keep it in indirect sun light for 2 days, mustard will make it sour slowly. Your delicious pickle is ready.

Mix gently carrot, radish, and salt together in a medium bowl. Transfer to a sieve or colandar and rinse. Squeeze the mixture to remove excess water. Making pickled vegetables at home is a must-do summer activity for my family. This Pickled Daikon Radish, Carrot and Cucumber is the first pickle recipe I learned from my mom.
