  3. Prepare 1 1/2 cup pumpkin
  4. Prepare 1 1/2 cup potatoes

  7. Get 2 tsp sambar masala
  8. Take Salt as taste
  9. Take 1/2 tsp turmeric

  14. Prepare 5-6 buds garlic paste
  15. Make ready 1 1/2 inch ginger paste
  16. Take 1 cup tamarind water

  19. Get 1/2 tsp mustard seeds
  20. Take 1/2 tsp corinder powder
  21. Make ready 1/2 garam masala
  22. Take 1 tsp sambar masala

  26. Get Corinder leaves fine chopped

Sambar is a traditional South Indian stew that goes well with idli, dosa, steamed rice or can be served as a soup. Any South Indian meal, be it breakfast, lunch or dinner, would be considered incomplete without Sambhar or one of its variants. Sambar, a hot and spicy lentil soup with mixed vegetables, is a must have accompaniment for popular South Indian breakfast and lunch recipes like Idli, Dosa, Medu Vada, Steamed Rice etc. A few years back Sambar used to be defined as South Indian delicacy, confined only to the Southern states of India.

Instructions to make Sambar:
  1. Take a cooker and boil 2½cup water. Add bottle guard,pumpkin,potatoes, and onions (All have to be roughly chopped). Add salt, turmeric and sambar masala and toor dal to it. Cover with lid. Wait for 5-6 whistle on medium to low flame.
  2. Take a pan heat up oil. Add dry red chilies, bay leaf, and mustard seeds to it. Within 30 seconds Add ginger,garlic paste. After 30 -40 seconds add thin slice chopped onion and cook it untill golden brown. Then add tomatoes and cook it for about 1 minutes. Then add all spices. Salt, red chili powder,corinder powder, sambar masala, garam masala and stir it while cooking. Cook it untill oil releases.
  3. Then add vegetable gravy to it and give it a good mix.then add tamarind water to it. Or add same water if required. Boil it for 5 minutes. And its ready. Add some fine chopped corinder leaves to it.

I have used homemade sambar powder to make sambar recipe. But store-bought powder will work Wash and chop all the veggies you want to add to the sambar. I have used carrots, baingan (small.
