  12. Cook until the edges of the eggs are crisp
  13. Transfer to plate and eat immediately with toast and butter

Whisk the eggs in a bowl and add milk. Also add salt, pepper and the grated cheese. Once the vegetable mixture is finished frying, add the egg mixture. We're using asparagus, shiitake mushrooms, Swiss chard and traditional chile flakes. Cut off and discard the mushroom stems; thinly slice the caps.
