  1. Prepare 1 medium onion, chopped

  5. Prepare 1 can chicken broth (14.5 oz)
  6. Prepare 1 jar/can tomato sauce OR salsa 16 oz - 20 oz
  7. Prepare 4 cup water
  8. Take 1 cup Quaker Medium Barley
  9. Prepare 3 tbsp sofrito (optional)
  10. Prepare 1 tbsp chili powder
  11. Get 1 tsp ground cumin
  12. Get 1 tsp salt
  13. Take pinch chipotle powder
  14. Get 1 can black beans, drained and rinsed (15 oz)
  15. Take 1 can corn, undrained (15 oz)
  16. Make ready 1 1/2 lb chicken breast, cooked and shredded
  17. Prepare 1 tbsp shredded cheese (each serving)
  18. Make ready 1 tbsp sour cream (each serving)
  19. Take 1 salt and pepper to taste

I really can't say enough about this Chicken Barley Chili. This chicken and barley stew falls smack dab into the middle of the comfort food category. And while comfort food often involves butter, cheese and bacon, this stew actually wears the "healthy" label.. Steps to make Chicken Barley Chili:
  1. In a LARGE saucepan or stockpot, heat up oil and add onions. Saute for about 10 minutes or until onions are golden. Add garlic and saute for a minute.
  2. Add in diced tomatoes, tomato sauce (or salsa), broth, water, barley, sofrito, chili powder, salt, cumin and chipotle powder. Over medium-high heat, stirring often, bring to a boil. Cover, reduce heat to low. Simmer for 45 minutes, stirring occasionally.
  3. Add beans, corn and chicken. Bring to a boil over medium-high heat, stirring often. Reduce heat to medium and simmer for 10 minutes, stirring often. Check that barley is tender. Remove from heat. Salt and pepper to taste (if necessary).
  4. Serve with a spoonful of shredded cheese and sour cream and mix it all up. We love eating this with tortilla chips for dipping and crushing on top. Makes A LOT - prepare to freeze some leftovers if you're not feeding a crew. Enjoy : )
