Heat the ghee in a small kadai, add in the cumin seeds and add the red chillies and allow it to crackle. Once its crackles and the red chilli is well roasted, turn off the heat. Daal tadka is a popular vegetarian dhaba recipe that can be prepared easily at home. Use of pulses and Indian spices make it a spicy and delicious side dish.

Steps to make Dhaba style daal tadka:
  1. Put 3 cups water, adrak, 1/2 tsp salt and turmeric powder in a pressure cooker and cook till one whistle.
  2. In a pan heat ghee add cumin seeds, hing. When it starts to splutter. Then add garlic ginger and green chilli. Saute for a minute, add onions and cook till it become light brown. Add all dried spices and mix well then add tomatoes then cook till ghee separates from the pan. Add daal and mix well. Cook for 2 min. Garnish it with coriander leaves.
  3. Now for tempering add 1 tsp ghee, dried red chilli, cumin seeds, when it starts to splutter and turn off the flame. Serve hot.
