The ingredients needed to make Middle Eastern Fatteh:
  1. Make ready 100 grams Garbanzo beans (boiled until tender, or canned)
  2. Make ready 100 grams Plain yogurt
  3. Make ready 2 clove Garlic (grated)
  4. Take 1 Salt and pepper
  5. Make ready 2 pieces Lebanese bread (or tortillas)
  6. Prepare 2 tbsp Pinenuts
  7. Take 1 Butter

Fatteh best translates to "crushed" or "crumbs," and it includes day-old bread fried and mixed with Fattet Makdous (Eggplant Fatteh).

Steps to make Middle Eastern Fatteh:
  1. Toast the Lebanese bread on a griddle or similar device until crisp.
  2. Break the bread into pieces slightly smaller than the size of crackers, then place them in a dish.
  3. Prepare the yoghurt sauce: Combine grated garlic and cooked garbanzo beans with the yoghurt, season with salt and pepper, and mix.
  4. Melt butter in a frying pan, and sauté the pinenuts. Agitate the pan to prevent burning. Turn off the heat once they brown.
  5. Pour the yoghurt sauce over the plate from Step 2, then sprinkle on the pinenuts and serve.
  6. Note 1: The ingredients are approximate. There's no need to measure them. I recommend adjusting the amounts to taste.
  7. Note 2: I forgot to add the pinenuts to the Fatteh in the photo. I'll update the photo in the future.
