The ingredients needed to make Chicken Chow Mein:
  1. Make ready 500 grams Chicken thigh fillet, sliced
  2. Take 1/2 small Wombok cabbage, sliced
  3. Prepare 1 cup Red cabbage, sliced
  4. Prepare 1 large Carrot, julienned
  5. Prepare 1 large Zucchini, julienned
  6. Make ready 1 medium Brown onion, into thin wedges
  7. Take 3/4 cup Peas and corn
  8. Make ready 1 cup Cauliflower florets

  10. Get 2 Packets 2 minute noodles, cooked

  14. Get 1 tbsp Ground cumin
  15. Take 1 tbsp Ground coriander
  16. Prepare 1 tsp Minced ginger
  17. Make ready 1 1/2 tsp Minced garlic
  18. Get 2 tbsp Sweet chilli sauce
  19. Take 1 tsp Cracked black pepper
  20. Get 2 tsp Sesame oil
  21. Get 1 Peanut oil for frying

Instructions to make Chicken Chow Mein:
  1. Prepare veggies. Keep brown onion in separate bowl. Keep cabbages in separate bowl. Green onions in another small bowl and all other vegetables in another bowl together.
  2. Slice chicken and set aside.
  3. Cook noodles- strain and set aside.
  4. In a large wok. Add some peanut oil and fry brown onion for two minutes on high heat. Add garlic and ginger and cook for a further minute, stirring continuously. Remove and set aside.
  5. Now stir fry chicken in batches and set aside with onion.
  6. I like to clean the wok now by adding water, bring to the boil and clean wok with a plastic egg flip. Tip out water and you are right to continue.
  7. Add some more peanut oil and and stir fry veggies (carrot, capsicum, zucchini, cauliflower, peas and corn) for 3 minutes.
  8. Add sauces and spices. Stir well.
  9. Add cabbage and stir fry for a further 3 minutes, stirring all the while.
  10. When you are happy that veggies are cooked to your liking, return the cooked chicken- onion- noodles. Stir well and serve.
