The ingredients needed to make Chicken Cafreal:
  1. Prepare 1 kg Chicken (Drumsticks or maryland cuts)
  2. Take 1/2 tbsp ginger garlic paste
  3. Prepare 1 tbsp lime juice or vinegar
  4. Take 1 tsp salt
  5. Get as required Cafreal Masala
  6. Prepare 1 cup tightly packed coriander leaves and stalks
  7. Get 4-6 hot green chilies (adjust as per spice tolerance)
  8. Get 1 & 1/2 inch piece ginger
  9. Get 8-10 fat cloves of garlic
  10. Prepare 2 tsp poppy seeds
  11. Prepare 1 tsp cumin seeds
  12. Make ready 1 inch stick of cinnamon
  13. Get 3-4 cloves
  14. Get 8-10 whole peppercorns
  15. Make ready 1 lime, juiced or 1 tsp tamarind pulp or 1 tsp vinegar
  16. Get to taste Salt
  17. Take 1/2 tsp turmeric powder
  18. Take 1/4 cup oil to cook add more if needed

Chicken cafreal is a traditional Goan dish that includes elements of Indian and Portuguese cuisine. This version of the classic recipe marinates chicken in lots of fresh spices before it is shallow fried in. Cafreal is a spicy chicken preparation consumed widely in the Indian state of Goa. The preparation originated from the Portuguese colonies in the African continent.

Instructions to make Chicken Cafreal:
  1. Wash and pat dry chicken before preparing the marinade. Apply ginger garlic paste, salt and lime juice and keep aside for 10 mins
  2. Prepare the cafreal masala; make a smooth paste of the coriander leaves & stalk, poppy seeds, dry spices (cinnamon, cloves, cumin and peppercorns) as well as the ginger and garlic.
  3. Apply half of this marinade on the chicken and keep it in the refrigerator for an hour to overnight if required.
  4. Before cooking, take chicken out and bring to room temperature.
  5. Heat a non-stick pan with oil and gently lower the masala coated chicken pieces in.
  6. Sear the chicken on high heat for 2 to 4 mins before turning down the flame.
  7. When chicken starts browning on both sides, add the reserved marinate, and 1/2 cup of water. Mix well.
  8. Add a lid and cook until chicken is tender and the masala has dried up.
  9. Switch off the flame when masala has cooked chicken well and chicken is cooked through.
  10. Serve Chicken Cafreal with rice or bread, and some baked or fried potatoes on the side.
