The ingredients needed to make Thukpa:
  1. Get 200 grams boneless chicken cut into bite size pieces or strips
  2. Take 1 Carrot cut into strips
  3. Make ready 1 medium sized potato cut into small pieces
  4. Take 2 cups roughly chopped Cabbage
  5. Make ready 1 cup green Beans cut into long pieces
  6. Take 1 big onion chopped
  7. Get 1 fresh chilli chopped
  8. Make ready 1 teaspoon ginger-garlic paste or crushed
  9. Get 1 tablespoon tomato paste
  10. Take 1 tablespoon Soya sauce
  11. Take to taste Salt
  12. Prepare 1 tablespoon Olive oil or Vegetable oil
  13. Prepare 1 teaspoon crushed Black pepper
  14. Get 2-3 stems of Spring Onion
  15. Take 200 grams Noodles of your choice

Thukpa - A Famous Sikkim Dish. Thukpa is a hot noodle soup made with mixing vegetables and/or chicken and goes well with the cold weather of northeastern Indo-Tibetan border region. Thukpa in detail: Thukpa is a Tibetan noodle soup, which originated in the eastern part of Tibet. Amdo thukpa (especially thenthuk) is a famous variant among Tibetan people and Himalayan people.

Instructions to make Thukpa:
  1. Heat Olive oil in a saucepan and add onions.
  2. Saute for a minute and then add ginger-garlic paste or crushed.
  3. Saute for few more seconds and then add chicken pieces and vegetable pieces.
  4. Fry for few minutes.
  5. Pour in 1 litre of hot water and salt.
  6. Cook in high heat for about 15 minutes.
  7. Reduce the heat and add tomato paste.
  8. Mix well and cook for 5 minutes more.
  9. Add soya sauce and black pepper. Give it a mix.
  10. In a separate pan cook noodles according to the instructions given.
  11. Drain and transfer them in soup bowls.
  12. Add chopped spring onion to he soup before removing from heat.
  13. Pour hot soup with vegetables over the noodles.
  14. Sprinkle some chilli flakes or fresh chopped chilli and serve immediately.
